Lentil & Ham Soup Grandma Mary
1 lb dried lentils
1 lb ham steak, diced (I like to use Nieman's because it has no nitrates)
8 oz low sodium chicken broth
About 8 cups of water
4 large carrots, scrubbed & coarsely chopped
2 medium yellow onions, coarsely chopped
3-4 stalks celery, coarsely chopped
1 bunch kale, coarsely chopped
1/4 C. Extra virgin olive oil
6-8 cloves of garlic, finely chopped
½ tsp salt
2 tsp ground cumin
1 tsp ground coriander
2 tsp ground turmeric
Saut´ the hard vegetables (carrots, onions, celery) in the oil until the onions are translucent and soft. (10-15 min.)
Add the lentils, liquids, ham, kale & seasonings to the pot. Simmer, partially covered, until soft (30-40 min.) Add more liquid during cooking if needed.
